The Apennine mountains are Italy’s backbone, running from north to south, from the Ligurian and Tuscan-Emilian Apennines as far as Calabria and Sicily, in a fascinating territory that unfolds for hundreds of kilometers.
The climate and the abundance of natural resources, of forests, rivers, meadows and cultivated fields, have favored the development of a cuisine rich in typical products and unique flavors.
Whoever has a chance to explore these mountains with their rounded peaks, their steep, wild slopes, will receive a unique, dream-like impression of a fascinating scenario.
The Apennines appear as rocky cliffs sloping gradually down to the plain, scored by deep furrows, the wild shapes of clayey canyons. Here and there, forests of chestnut trees or conifers suddenly appear, broken by clearings and meadows that were once cultivated fields. Torrents and rivers cut through the mountains to form valleys with artificial lakes. From above, the chain of mountains looks like a comb, an ensemble of parallel streaks separating great ribs of land sloping to the south.
The mountains rise, abandoning the endless urban sprawl that winds from one province to another, dotted by towns that grow smaller and smaller, with an occasional abandoned village. The flowers here are the wild ones of the grasslands, those of the Apennine distinguished by their wild, sweet fragrance.
The honeybees also fly to the trees that surround or interrupt the meadows: wild cherry and apple trees, chestnuts and mountain ash trees, as well as oaks, beeches, ilexes and firs. Blossoming time occurs, depending on the altitude, from May to July.
The scents of the Emilia-Romagna Apennines are those we find again in its honey: a sweet medley at times sharpened by the presence of honeydew, with various aromas of hay or meadows.
The millefiori honey from the mountains solidifies a few months after having been gathered. In color it ranges from the lightest amber to dark tones, depending on the presence of honeydew. The smell and flavor too, more or less intense, are never the same. Every year they change, exalting the fragrance of certain flowers or of others depending on the predominant floral source. With its differing shades of taste and scent, this honey is highly appreciated and suitable for all uses.
