The acacia (scientific name, Robinia Pseudoacacia L.) is considered an invading plant by botanists. Thanks to its rapid growth and great capacity for adaptation, in fact, the acacia grows wild in a vast range of soils. Originating in North America, it has taken root practically everywhere in Italy. It is often seen growing along railway lines, where it is used to consolidate steep slopes, thanks to its extensive root system. In the preAlpine zone of Piemonte and Lombardia, it forms real forests, sometimes covering hundreds of hectares.
For beekeepers the acacia is a vitally important tree; from its blossoms the bees produce large quantities of precious honey. The flowering of the acacia trees is
luxuriant, providing a striking spectacle. The eye is enchanted by the white mantle covering the branches like a snowfall, while the sense of smell is overcome
by the intense fragrance of the blossoms.

The bees dive repeatedly into the calyxes overflowing with nectar, dedicating themselves to this activity from morning to evening without a pause for ten days or so, the blossoming time.

Rain is a threat to the acacia. A violent storm may strip the blossoms from the boughs, and ruin the season. Less heavy rains do not harm the tree but will keep the bees far from the blossoms, taking refuge in the shelter of their hives. And as if this were not enough, the acacia chooses to blossom in May, a month when abrupt changes in the weather are common.

The production of acacia honey is often adventurous, and calls for intuition and optimism. These traits are not lacking among beekeepers, ready to face the wind that keeps bees far from the trees and dries out the nectar in the blossoms, the cold that keeps bees from flying, and rains of all kinds. And nothing keeps them from carefully choosing the places where the acacia is about to burst into bloom, staking everything on their intuition. In May, in the Prealps, the landscape is rich in atmosphere. The mist dissolves on the plain, disclosing the peaks of the surrounding mountains, still mantled in snow. The green meadows are suddenly interrupted by clumps of acacia trees, blossoming white. The silence of the woods is broken by the sound of the wind and the incessant buzzing of the gathering bees.
Acacia honey, one of the very clearest in color, remains liquid regardless of the temperature or of its freshness (it very rarely crystallizes). The fragrance is light, the flavor delicate and very sweet, with a hint of vanilla.  

A honey almost universally liked, it is particularly suitable for use as sweetener since it does not change the taste of the substances it is added to. It is frequently recommended by pediatricians.
